Everyone knows you can milk a cow, a goat, a sheep, and even a coconut. Luckily for all of us dairy free folks, you can also milk nuts. Well you can’t physically “milk” them, but you can extract the liquid from the nuts. Almond milk is a fantastic alternative to cow’s milk. It’s low in… Read more »

We hosted a pre-Thanksgiving brunch at our house a few weeks ago with some of our dear friends and my parents. It was such a great time of fellowship for the adults, and play time for all of the kiddos Having a brunch is a nice change to the usual dinner party, and truth be… Read more »

These baked chicken strips are a great gluten free alternative to the standard store bought chicken nuggets.  My son (and husband!) loves to eat these at night for dinner. If there’s one thing that frustrates me the most, it’s having to make 2 different meals at dinner time. I try to feed my son what… Read more »

What was once therapeutic and relaxing for me, has now become chaotic and stressful! My son is crawling everywhere, gets bored of an activity after 5 minutes, and loves to climb the stairs. Needless to say, cooking is not as easy as it used to be. This recipe for Grain-Free Lasagna will take you about… Read more »

I can eat eggs again! Just in time too, as I couldn’t come up with a pumpkin pie I liked without the use of eggs. Introducing my Gluten and Dairy Free Pumpkin Pie! The crust on this pie is really simple to make and just presses in to the pie plate instead of having to… Read more »

*Note : Some have had issues with the dough for this recipe. I am deleting the yogurt note as I know for certain that the bread works with the Farmer’s Cheese (dry curd cottage cheese). A reader told me they subbed thick greek yogurt and had success, but I have never tried it myself. I… Read more »

I love pomegranate seeds in a salad. They add a nice crunch and a lovely red color, and go really well with a balsamic vinaigrette. I actually would have preferred to put Bosc pears in this salad, but I couldn’t find any ripe ones so I used some of my son’s blueberries!

See my updated version of this recipe, plus a video! Click here!      I don’t know about you, but I grew up on the canned variety of this holiday favorite. I actually never liked it and skipped over the jelly like substance at every Thanksgiving. Now that I’ve made it homemade and know what… Read more »

Butternut squash is the quintessential Fall comfort food to me. I love the silky texture when its cooked, the rich buttery flavor, and of course the vibrant orange hue. Butternut squash, along with a lot of the other members in the gourd family, are low in fat and high in fiber. That bright orange color… Read more »

I made a trial Thanksgiving dinner the other night and am so happy with the recipe I came up with for this Roasted Butternut Squash with Maple Sage Brown Butter. Try saying that 5 times fast! I love candied yams, but since starting the Specific Carbohydrate Diet, gave up potatoes along with the grains. As… Read more »

I wanted to try ice cream with almond milk, since almonds are full of great nutrients and also yield a much lower fat and calorie content. The result was my Dairy Free Mint Chocolate Chip Ice Cream – a delectable treat – but one that has a slightly more icy consistency than the higher fat… Read more »

These “fries” are actually not fried at all. I tried them both ways, and much preferred the baked version. Very surprising considering my love for french fries! They are super easy to make and are a great snack or appetizer. Serve them hot with a side of warm marinara sauce or dipping sauce of your… Read more »

My sister sent a Halloween care package for my son and instead of candy included a few of his favorite Plum Organic baby food packets. She sent the pumpkin banana flavor which were delicious! I’m willing to accept my disease and the dietary changes needed to keep it under control, but I’m not ready to give up the foods I love like this Roasted Pumpkin Soup and the years of memories that go with them! Every year, my mom would have a Halloween party before trick-or-treating. She would serve… Read more »

I love an easy shake that I can use as a meal replacement in the morning if I’m short on time, or as a snack in the afternoon when I can’t make it to dinnertime. I especially love it when it involves my two favorite super foods: flax and raw cacao. I hope you all… Read more »
