DANIELLE’S DIGEST: WEEK OF APRIL 6TH

Hello all, I have lots of content for you today! This digest features my latest Waking Up With The Walkers videos, some really exciting Easter inspiration, a brand new recipe, and a sweet look at my time home with my kiddos.

Wake Up With The Walkers- World Famous Cheese-Free Skillet Queso

This is one of those recipes that dairy-free friends love because it tastes like the real thing. ? I hear all the time “I haven't had a queso that actually tasted like queso in years!” The recipes calls for ghee, but you can use olive oil if you are 100% dairy-free. Dip with grain-free chips like plantain, Siete, or taro chips. Or leave out the taco meat and drizzle it over broccoli like my kids love! ? You can find the recipe here!

Do you do an Easter Egg Hunt or Easter Baskets? Or both?? Despite the shelter-in-place, I’ve been trying my hardest to maintain some sense of normalcy for my kids, and continuing with all of our favorite Easter activities and traditions is a part of that plan.

This year, it’s looking like the egg hunt will be just family, but I’m so excited to hide eggs all around our new yard! My grandma always tied strings around our baskets and led them around the yard for us to follow until we found them, and I’ve carried that tradition on for the younger ones too.

While we aren’t frequenting local grocery stores for candy, there’s still lots of stock online at places like Thrive Market, Target, and Amazon. You can also place an order online for certain grocery stores and do a curb pickup!

I like to add healthier candy, new books, and fun activities to my baskets. You can see photos of how I like to put them together and examples of what I add in a blog post I did a couple of years back. ? Save those precious egg cartons! They work great for portioning out kid-sized portions of candy and they look cute!

Wake Up With The Walkers Dairy-Free Double Chocolate Thin Mint Ice Cream

My very favorite Girl Scout Cookies are Thin Mints. Since I have a delicious recipe for Gluten-Free “Mint Slims” in my latest cookbook, and I love all things chocolate, I made a Double Chocolate Thin Mint Ice Cream! It’s definitely my new favorite paleo ice cream recipe. We made this on the fly so it's not published anywhere yet, but it turned out SO good, so it will be published to the blog soon!

The recipe is coming, keep your eyes out! ? In the meantime, you can use the Double Chocolate Ice Cream with Peanut Butter Swirl from my blog to work off of if you happen to have a batch of my Mint Slims in the freezer that haven't be devoured (slim chance – I had to hide the 5 that were left from Ryan so I could use them in this recipe!).?

Grain-Free Samoa Cookies!

Did you call this Girl Scout Cookie Samoas or Caramel deLites?? Apparently there are two separate companies who make these cookies so there are two names! I always grew up calling them Samoas, myself. While I’m not a big fan of coconut, I do think these gluten-free Samoas are amazing!

I tested a few different things but decided on using grass-fed butter in this recipe for the caramel because it was the richest and most delicious. However, there are a few dairy-free options listed!

Don’t skip the blog post on this one, I share tons of helpful tips to make the process easier!

These would be amazing for a slightly easier Easter or Passover treat if you want to skip baking the carrot cakes, tarts, or pies this year.

The kids have been asking for s’mores for weeks so I made a batch of my marshmallows and we hung by the fire pit last night and watched the sunset. PS I’m working on a GF graham cracker recipe for you guys. It’s not quite there but we did use them last night and they’re close!

22 days (so far -but who’s counting?! ?‍♀️) at home has been “interesting”, but last night, we spent the evening giggling, getting sticky and coated in chocolate, thankful that we can safely spend time outdoors and for all of the natural beauty around us.

Wake Up With The Walkers Gluten-Free Banana Bread

The grain-free banana bread recipe in my first cookbook, Against All Grain, is a major fan favorite, but I constantly get requests for a nut-free version. For those of you who have tree-nut allergies, this one from my Eat What You Love cookbook is for you!

We're not nut-free, but my family loves the flavor of this loaf so much that it's gone within a day. Ryan and I may be mostly to blame. ?‍♀️ I typically don’t add anything to the mix, but some dark chocolate chips or walnuts would be delicious additions! We made this during our daily Live cooking show on Friday, and of course, my little chocolate-lovers wanted to sprinkle in some dairy-free chocolate chips. And sneak a few themselves!

Do you normally do a big Easter brunch at your home, or go out?

Regardless, I think we’re all probably looking for a way to still enjoy celebrating, but with a little less prep in the kitchen, since we’re not hosting big crowds.

I typically like having the full Easter spread from my Celebrations Cookbook, including paleo Sticky Buns, Honey Glazed Ham, and gluten-free Carrot Cake, but many of the ingredients (and bandwidth) that I need are not possible this year! So instead we’re opting for this beautiful grain-free Asparagus Prosciutto Tart, Butter Lettuce Salad, and *hopefully* my Carrot Cake if I find the energy!

Wake Up With The Walkers Gluten-Free Pumpkin Chocolate Chip Muffins

Asher’s very favorite grain-free muffins are my Pumpkin Chocolate Chip Muffins so we made a batch together live last week. These muffins definitely have the best rise of any of my recipes. I love baking with Asher because he is so eager to learn. He’s been baking more and more on his own, and I love it! We treated this as a hands-on learning experience, so I hope you guys do so also!

Wake Up With The Walkers Gluten-Free Chicken Fried Rice

I wrote this recipe only using cauliflower but lately have been adding steamed rice for extra carbohydrates for my growing kiddos. They love this meal, and it is loaded with healthy vegetables. You can sub in beef or shrimp for the chicken if you would rather. I like topping the fried rice with an egg or two for added nutrients and protein, but you can leave it out if you don’t have them.

Next time they fight (t-minus 10), I’m just going to leave them to fend for themselves and stare at this picture in a closet with headphones on. ?
In all seriousness though; while they’ve definitely bickered a lot more since we’ve been at home, and had tons of more time outs, they’ve also created so many sweet memories together. They have new games they’ve made up and fun little inside jokes. Especially with Asher who is usually super busy with school, sports and homework.

Wake Up With The Walkers – Easter Egg Dying

We are doing Easter crafts to get ready for the weekend. ???
