This digest shows you guys a look at our super fun daily “Wake Up With The Walkers” videos over @daniellewalker, a birthday shoutout to my bestie, high and low lights from our fourth week in quarantine, and a couple of new recipes and blogs for you to check out!!

Wake Up With The Walkers – Gluten Free Chocolate Zucchini Muffins

These nut-free Chocolate Zucchini Muffins are the perfect midday snack with a sneaky hidden veggie! If you don’t have zucchini, then feel free to switch out carrot or another shredded squash evenly.?Also, if you’re egg-free, then I talk a little about the functionality of baking without eggs, what I like, and what I don’t! Breakfast for dinner has been on regular rotation over here! It’s just so easy and the kids think it’s super fun. Have you been doing anything a little different lately for meals? Wake Up With The Walkers – Gluten-Free Waffles

Watch our favorite, easy paleo Waffle recipe being made! The grain-free Pancake Mix is a slightly adapted version from the original in my Meals Made Simple cookbook. I posted the video here of me making the mix so you can see the modifications that make these waffles crispy. These can easily be made egg-free with a flax egg, and if you need them to be nut-free, check out my all-time favorite waffle recipe in my Eat What You Love Book!

I took this picture to send to Ryan upstairs with the kids to show him that I completed my first full HIIT workout in the garage gym he set up. Then I noticed my scars.

I see the one on my chest every day – it’s from a basal cell carcinoma removal (wear your sunscreen and stick to the shade folks!).
But the one I hadn’t noticed in a long time was the very small circular one on my left tricep from my PICC line during my hospital stay in October/November.

I could barely walk down my stairs in my house when I got home from my 3 week stay. I could make it to the end of my driveway and back in December. I progressed to walking around the block in January, and got to 3 miles a day by February. I never even dreamt of being able to do a full-body workout back then.

But I did it today. I’m so grateful for how powerful our bodies can be, and their ability to heal and rebuild. And I’m pretty dang proud of this one today, even though I spent the last 12 months feeling like it betrayed me.

 

Wake Up With The Walkers- Protein-Packed Green Smoothie

More often than not, for breakfast, I have a smoothie that is loaded with fruits, greens, protein, fiber and some type of fat.
It’s super easy and fast – especially while I have kids running through the house and I’m trying to feed everyone.

I actually have loads of amazing freezer-friendly smoothie-pack recipes in Eat What You Love book or you can find Asher’s Green Smoothie on the blog!

I now just usually add collagen and avocado to it now!

Do you dye Easter eggs each year or let your kids decorate them with markers and stickers?? Easter is one of those holidays that reminds me of what matters, how I’m spending my time, and the hope that we can have. I’m planning on getting everyone involved in sweet activities, like dying eggs, that bring us laughter and make memories.

We use all-natural vegetables and fruits like Beets, Cabbage, and Blueberries to make these homemade dyes that are completely safe for little hands. I bet you can’t guess what makes that beautiful blue color in front! Any guesses? ?‍♀️ Find the method on my blog or in my bio @daniellewalker ! Wake Up With The Walkers- Gluten-Free Squash and Pesto Pasta with Shrimp

I used some pantry items I had on hand and a Kobacha squash I wanted to use up to make this super quick and tasty pasta dinner for my family. I had a jar of my dairy-free Pesto in the fridge that I made to use up some basil that was about to go bad, and it worked perfectly with the squash and toasted walnuts. The kids had chicken on theirs, and Ryan and I had shrimp!

This isn’t a recipe in one of my books or on my blog yet since it was made on the fly, but it’s very easy to follow along with the video! You can also find a basic grain-free Pesto Pasta recipe in my Eat What You Love book!

While your feed is probably filled with empty boxes of Samoas, Tagalongs, Thin Mints and other Girl Scout cookies, I felt like it was time I remind you that being gluten-free doesn't mean you have to miss out. I’ve created a remake of Tagalongs that’s so good, you may have an empty bag pretty quickly too!

About a month back, I realized that I already had recipes created for each component for these, so I decided to combine them for these paleo Tagalong Cookies! We take a shortbread cookie and top it with a sweetened peanut butter substitute and then fully dip it in chocolate. These are already egg, gluten, and grain free; and can easily be made nut-free too!

Happy birthday to my bestie @hillaryscottla !! ??? I was supposed to be out in Nashville tonight surprising her for a special birthday dinner, but a social media, social-distancing HAPPY BIRTHDAY is going to have to do for now!

Hill – we met at a time when I needed it most, and you were about to. Only God could have brought us together, in such a way, and at such a time. In the 5 years, we’ve each gone from 1 to 3 kids, walked through loss, grief, new life, joy, spiritual grappling and strengthening, NYC adventures, random run-ins in Ohio, so many late nights on the couch with a glass of ? , and so much more.

Your family is so so special to me and Ryan, your girls are my adopted nieces and have provided so much healing for my heart, and your home always feels like the safest haven.

Here’s to a happy 34th year, a dual-family vacation that WILL get rescheduled, and seeing each other in our neck of the woods and yours. Love you SO much!!

Wake Up With The Walkers – Homemade Spaghetti Meat Sauce

The best thing about my Granny Sarella’s Spaghetti Sauce is that you probably have most of the ingredients that you need in your pantry right now! It is loaded with rich flavor and warming flavors which makes it the best kind of comfort food . My favorite way to make this sauce is to simmer for about 3 hours over the stovetop, but if you need it to be ready quickly then feel free to make this in the Instant Pot.
