This week's food has been full of summertime produce and lots of salads and grilled proteins.

For breakfast we enjoyed a spinach and avocado scramble with raw cheddar and a homemade tomatillo salsa. ?

eastonWe've had to drive down to Stanford a couple of times a month (3 hours roundtrip!) to have checkups after Easton's surgery. I shared this sweet videos of his little giggles while I tried to keep him entertained in the car! You can watch it here or click the photo.

This_was_dinner_tonigThis was one of our dinners this past week. I used grilled chicken, greens, purple cabbage, snow peas, cucumbers, carrots, and the almonds and dressing from my favorite Thai Salad.

Well this post made my week. This sweet boy supermax is making a meal plan from my cookbook Meals Made Simple. His mom says he's thriving against brain cancer in part due to diet!! ???

Working_on_a_bread_and_butter_picklesI've been working on a Bread and Butter Pickle recipe for you guys. It will be up in time for the 4th of July!

Weekly_staple_for_us-_lettuce_wrapped_tacos.

These lettuce wrapped tacos are a weekly staple for us. We used turkey for a change and my taco seasoning mix from Meals Made Simple with a fresh tomatillo salsa, avocado, and raw grass-fed cheddar.
