Danielle’s Digest: Week of 9/15/15

This week Easton and I have been a bit more adventurous! We've been developing some recipes and even photographing them… which was quite the endeavor! You really never realize how often you use your hands when you're holding your baby in one arm and snapping photos with the other. We ate simply this week which made me very thankful for Meals Made Simple because it helped me out quite a bit!

A baby sleeping on their hands will forever be the cutest thing to me. He looks like such a little old man.

I've recently been corndog testing for a fun little project for the blog! Those first few tries were rough (as you can see, the hot oil blew off the batter haha!) but we altered the batter a bit and ended up with a winner. The recipe will be up next week and I have both a nut-free and regular version for you!

Like I said, we ate simply! Applegate Farms sausage, Farmhouse Culture kraut, and a yummy salad topped with my Dairy-Free Ranch Dressing from Meals Made Simple on page 247!

meals made simple stretch itOne of my favorite features of my Meals Made Simple Cookbook are the “stretch it” recipes. I show you how to prepare extra meat and repurpose it later in the week for a completely different meal. This is a crockpot braised pork shoulder for one meal that is turned into a velvety Pork Ragu a couple of nights later or a Cuban Pork Panini (one of my all-time favorite recipes!). Have you tried it?

 Snack_time__The_spicy_almonds_from_my_Thai_Salad_barely_make_it_onto_the_salad._They_re_my_favorite_thing_to_munch_on_these_days._And_I_m_currently_obsessed_with_this_flavor_of_Kombucha.

I've been snacking a lot recently and these Spicy Almonds are just hitting the spot! These are the almonds from my Thai Shrimp Salad with Spicy Almond Dressing. And this kombucha is seriously the best I've ever had… so good!!

I caved a little bit this week… I thoroughly enjoyed these fries! My excuse is that I was sick, low on sleep, and I'm nursing. I'm sure I could have come up with a dozen more excuses 🙂

It was take your baby to work day! Bring your baby to work day. I've been thankful for this 4moms bouncer that keeps E happy and even makes him doze off to sleep. 
We're testing a rendition of my Great Grandma Sarella's biscotti for #aagbook3 today! You all know her incredible spaghetti sauce from book 1 ?

BackseatWe improperly timed doctors visits and errands today so backseat nursing in the Target parking lot it was. And blow-out diaper trunk changes. Target apparently has fantastic policies about nursing moms in their stores, but I prefer the privacy of my car with a comfy seat! Plus AC! Speaking of nursing rooms, have you seen the Nordstrom mommy rooms? I booked it across the whole shopping plaza the other day just to be able to feed Easton there!

I added some leftover tamarind glaze to my Thai Shrimp Salad with Spicy Almond Butter Dressing and it was SO good! A little tangy, a little spicy, and a little sweet. Find the recipe here!

My “big” boys had a special weekend away so I was able to shower, do my hair, makeup, and eat a meal all while my youngest boy was sleeping! I feel like a new woman haha!
