Alas, finally an egg-free and nut-free crust that I've been working on for book #3. I think you guys are really going to love this book! More details to come on it, but it will be out next Fall! 🙂

These are my favorite times with Asher. He is such a snuggler these days! I never want these moments to end. And I may or may not encourage more reading and tv time at the end of the day than I used to. 🙂

Many people ask me what my go-to meals are during the week so I wrote a lot about my tips and favorite recipes in my Meals Made Simple cookbook. Lettuce-wrapped burgers with plenty of avocado (and usually bacon) are one of our most common and loved dinners! Check out my Barbecue Burger recipe here!

Okay, proud momma moment right here! Asher used to eat salmon as a baby with no problem. He has since refused it for 4 years, but the other night he ate it without a complaint! He also loves asparagus and salad so I always load up his plate with that. The best part was I said something about being proud that he ate fish, and he responded “Salmon is a fish?” What kind of fish is it?” I told him Salmon is the type of fish, and he grinned ear to ear – proud of himself for eating fish! Then he asked to see a picture of it whole and what color the skin was. It was so cute!

Getting him involved and teaching him about what he is eating (and the benefits of what he is eating!) has been so beneficial for me in getting him to try new things!

This is where I've been wanting to be everyday for these last couple of weeks. Epsom salt baths are just the best!

Date

Took this one on a date day today before his whole world gets flipped upside down! We swam, ate French fries, played chess, had ice cream, and went bowling. He even wore a collared shirt for me and asked for his hair to be combed over ?

When I go into Costco and they have my book, I usually sign some copies. It kind of feels rebellious but I love sending readers into find them and love seeing their photos with it even more! 🙂

national smores day

It was National S'more Day a while ago so I just had to share this with you all! This was a recipe that didn't make the cut because we ran out of room when I was writing the Against all Grain cookbook! These are my Grain-free S'more Tarts.
“First you take the Graham, you stick the chocolate on the Graham. Then you roast the ‘mallow.” 

Use my Graham Cracker Crusts (page 270) and bake them in 4 individual tart pans. Fill them with the ganache from page 284 and let them set. Then make the Italian Meringue from page 294 and toast it quickly on top! Or use my homemade marshmallow recipe from Joyful (which is still 50% off!) if you don't have a copy!

 

dinner lifesaver

This is another one of my dinnertime lifesavers. It's my Taco Seasoning from Meals Made Simple. Use it with ground chicken, mix it into leftover rotisserie chicken, stir it into soup, or sprinkle it on protein or veggies before grilling. It packs a lot of flavor in little time. This seasoning will last about 6 months when kept in an airtight container!

paleo taco tuesday

I don't know if other people do this but I love doing taco Tuesdays. This is my Chipotle Barbacoa with my Grain-Free Wraps. If you don't have time to make the wraps you could quickly make some cauliflower rice and spoon the meat, avocado, onion, radish and cilantro on top fro an equally as satisfying meal!

 

warning this coconut flour

I used this brand of coconut flour for my pancake mix from Meals Made Simple, and they really didn't turn out! It can be frustrating how much variety comes between brands of the same products with grain-free baking, and I still haven't figured out the perfect solution short of buying every single one and testing them all for you which is impossible! I usually like this brand for shredded coconut so I bought the flour because I was out of my bulk. So far, 2 batches of pancakes have flopped (not flipped!) and I even switched to a non-stick griddle hoping to salvage the batter. I also made my Real Deal Chocolate Chip Cookies and they flattened out like crazy. Both were also a lot more “grainy” or gritty. I posted this on Instagram and Facebook and loved reading all of your comments! I wonder if this is why some of you have trouble with my grain-free wraps too. I think I'll stick with Tropical Traditions or Nutiva.
