Hello! Hope you all had a great week. This weeks digest includes what we ate this week, Easton's new hair do, and a new video tutorial on how to make my AAGwich's! Scroll down for more and stay tuned for a Cinco de Mayo roundup and new recipes coming on the blog this week!

Dinner! Grass-fed ground beef has the tendency to dry out, but I figured out a way to fix that for the BLTA burgers in Celebrations and they’re our all-time favorite burgers to make now. With or without the special sauce!

Did anyone else’s mom make Mickey Mouse pancakes when they were growing up?! We’re heading to Disneyland in a couple of weeks so these grain-free banana chocolate chip pancakes from my first cookbook Against all Grain are on the brain! ?

 

Easton was so funny using the shop vac on his hair the other day. He looked my Grandma Bonnie after a trip to the hair salon. ? Go watch the video here.

 

This is my favorite salad right now. The spicy almond dressing and spiced candied almonds are from a Thai salad from my blog!

 

I couldn’t eat many veggies while I was sick recently so I’ve been craving them like crazy lately! Have you made this grain-free Spring Veggie Tart yet?
I was thinking about creating some Meatless Monday recipes for you guys, whether you just want to get more veggies in your diet or you’re full blown vegetarian.

Ryan surprised me with Justin Timberlake tickets. I was so tired the next morning, but it was so worth it!
