DANIELLE’S DIGEST: WEEK OF JULY 2nd

Happy July everyone! Hope you all had a happy fourth of July or Canada Day, or just a great day for all of my International readers :), spent with family and friends! This week's digest includes a look into our 4th of July celebration with my sister and her kids in Denver, what we ate, a new recipe and video for a Strawberry Lemonade Margarita, and a little update about myself for anyone who is new here! Scroll down for more!

Our dinner, and the kids dinner. I always try to give them what we’re having – even if it’s presented a little differently. For this dinner in particular – I know the boys don’t like the stone fruit salsa, but they like the fruit itself. And they’ve both tried the potato salad and don’t like it (yet!! I will get them – I started eating it around 15 when my grandma made it). Asher also had a huge salad on the side (just greens and my balsamic vin).
And as I also said over there – they also frequently get frozen grain-free chicken nuggets or grass-fed hot dogs on the days where we’re having something I know they’ll fight, or we’re short on time! Balance is ?

If these chocolate graham marshmallow sandwiches are part of your Summer tradition- you can use my homemade marshmallows to make them this year!
TIP – cut them, the leave them out to dry out a bit at room temp uncovered so they toast better. They will melt a lot more quickly than your standard corn syrup/corn starch ones so toast them hot and quickly and pull them as soon as they’re golden!

Nope not pregnant.
I knowingly ate some dairy-free cream cheese that had 3 different gums in it (xanthan, guar, locust bean) as well as something with tapicoa and xanthan gum for 4th of July yesterday. I knew it was probably not a great decision but I did it anyways. ??‍♀️This happened with 3-4 hours of eating it. And it was sooo painful. This also happens with cassava, corn, wheat and refined sugar.
Just a little reminder to always listen to your body and look at the ingredients and don’t make dumb choices ?. Bloat like this isn’t normal, but so many people live with it daily!

A little about me if you are new here!

* I’m Danielle Walker
* I’m 33.
* Wife to Ryan & we have 4 beautiful children (3 here, our daughter Aila in Heaven).
* I was diagnosed with an autoimmune disease called Ulcerative Colitis (a form of IBD) at 22. It nearly took my life a 1/2 dozen times & the harsh medications and bi-annual hospital stays were incredibly debilitating & caused me to take medical leave from my job.
* VERY long story short – I did an elimination diet (?grains/gluten, dairy, legumes, nightshades, eggs, refined sugar, processed foots) and found that food could heal, w/out the help of any of my Doctors, & was able to avoid immunosuppressants, surgery, & steroids after going paleo (?grains/gluten, dairy, legumes, refined sugar). I still suffer from time to time, mostly after the birth of my babies, but manage my symptoms through diet & lifestyle. Click the link here to read more about my journey!

And a few random facts, just for fun, for those of you who have been here a while! * I lived in CO from ages 5-15
* Ryan and I started dating when I was 16!
* I did ballet for 12 years. Still love it & occasionally can be found doing a random plié, rond de jambe, or frappé at my kitchen stove
* I’m a self taught cook
* I have a marketing degree & always wanted to be a fashion publicist “when I grew up.”
* I love to sing. But only alone in my house (& occ on IG stores?) ✨

I went through and answered as many questions as I could just now in that post! I’ve also read all of your DMs, and will try to answer as many as I can in my stories!
If you’re new here – I had to set a personal limit on answering DMs one on one, because it was taking too much time away from my family and began to be emotionally draining (emotional stress is a HUGE trigger for my autoimmune disease). So instead, I try to take the most frequently asked questions and answer them for everyone in my IG stories (whiting out the sender’s name of course for privacy!).
