DANIELLE’S DIGEST: WEEK OF APRIL 16TH

Hi everyone! This week's digest includes a new Instant Pot recipe that will be coming to the blog soon, a new step-by-step video for my popular Mexican Chicken Chowder converted into an Instant Pot recipe, and a really cute note from Asher that is making me realize my kids are growing up so fast! Easiest Instant Pot Chicken Tacos ever! Head over to my saved stories on Instagram to see how I made this, or last week's Facebook Live. I'll be publishing the written recipe to the blog this week! 
1 pound boneless skinless chicken breasts
2 pounds boneless skinless chicken thighs
1 cup fresh salsa (I like roasted tomatillo)
2-3 tbsp taco seasoning (use the recipe from my Meals Made Simple cookbook to avoid additives)

 

She’s 10 months already. How did that happen?

 

Ok yesterday’s post was sad that Kezia was growing too quickly, but when they grow up you get pieces of gold like this.  ? I have to say, my favorite part is that he says I’m happy and smile a lot. Especially after being sick for so long recently. My biggest fear as a mom is that my kids will always remember me fighting my autoimmune disease, but I’m so happy he sees the positive side of me! Also – it’s true, I don’t love burned food. But I hate cold food more!

 

Made Ryan the Buffalo Wings from Celebrations for dinner the other night. The sauce will keep in the fridge for a few weeks so I just keep a bunch in a jar and do the chicken fresh so it’s faster! They’re perfect with my dairy-free Ranch from the same book!
