DANIELLE’S DIGEST: WEEK OF MARCH 12TH

Hi everyone! I hope you all had a great week. I am finally starting to feel a little bit better from my current flare up and hopeful I will be back in action soon. Thank you all for your well wishes and prayers, it means so much to me! Since I am still pretty low on energy I am sticking to easy meals such as my sheet pan Peruvian Styled Chicken from Meals Made Simple, spending time in bed with my little ones, and making green eggs and natural green cookies! Sheet pan meals are the easiest for me right now and I know this one will win my family over again and again and so it’s on regular rotation. This Peruvian Chicken Sheet Pan Super is on Page 88 of my Meals Made Simple cookbook (I used fingerling potatoes for them instead of sweet potatoes).

My family has requested these Caramel Pecan Sticky Buns for Easter breakfast! The gooey caramel filling and topping is my favorite part.

Who makes Corned Beef Cabbage for St. Patrick's Day? My mom made one every year when I was growing up and it's one of Ryan's favorite meals too.

I have a paleo friendly version (that is not bright red!) that uses a beef brisket that has been brined in a salt and herb bath for 4 days. It's served with a parsnip turnip puree instead of mashed potatoes. Get the recipe here.
