This week on Danielle's Digest you'll see what I've been up to in the week that I've been back from tour, how we spent our Halloween, what I've been baking on these Fall days, and even what I've been up to in Nashville! Since I only have a few tour stops left (Atlanta and McLean) I'll be restarting my weekly Danielle's Digests to keep you updated on what's going on! I also will start up my Facebook Live weekly segments again very soon!
We were able to squeeze in one last pumpkin patch trip before the Halloween festivities started!
Good news! One of my readers made my new nut-free Chocolate Cake from Celebrations (page 152) with flax “eggs” instead of chicken eggs and they worked! She says they were a little more fudgy and obviously didn't rise as high but all of the party goers loved them! The frosting is also from the book.
*PS did you know that you can sub in duck eggs for chicken eggs (not quite even but Google the ratio) and a lot of people who can't tolerate chicken do well with duck… always make sure to check with your allergist first though.

Apples would be a great substitute for the peaches in this Peach Cobbler if you've recently been out to the orchard. And don't forget to serve it with a side of my brand new (and favorite yet) whipped cream recipe!

I know I just released Celebrations, but they take about 2 years to complete, so it's that time again! This concept will likely morph into many different things before I land on the final idea, but I've been thinking kids, family, crockpot, sheet pan, 1pot, make-ahead etc.

I could eat this sauce with a spoon. Actually… I do eat this sauce with a spoon! It's practically cream of mushroom soup and it's so tasty. It's the sauce from my Green Bean Casserole with Crispy Shallots recipe in Celebrations!

I baked the nut-free Pumpkin Bread from Meals Made Simple into muffins on one of the glorious rainy Fall days this past week. ?☔️? I think they get even fluffier as muffins than baked as a loaf!

If you've started reading and cooking from Celebrations, you have been reading all about my family traditions and favorite recipes from my childhood. My grandma used to bring powdered sugar donuts to Halloween every single year, and served it alongside pumpkin soup and hamburgers. This one didn't make the book (because powdered sugar isn't Paleo) But I had to make them for my family this year!
I used my Caramel Doughnut batter and then let them cool for about 5 minutes. Once they were cooled but still slightly warm, I put them in a ziplock bag and added the powdered sugar.
Whenever October 31st comes around, people ask what we do at Halloween in regards to treats. We always go trick or treating and then we weigh the candy he collects and give him a Target gift card per pound. Then I still let him have a few pieces of dye-free organic candies. Because it's Halloween after all! ??

The countdown to Thanksgiving is officially on! I've been dreaming of the recipes from Celebrations for so long, I'm not sure I'll make it 3 more weeks. A friends-giving is probably in order so we can have this meal sooner!

I had the opportunity to go to the CMA awards in Nashville with some friends and the show was so great!
The night was amazing, but catching up on life and long dinners with my dear friends were definitely the highlight. I wish I could live in two places at once!
I had such a fun time cooking up a storm from Celebrations with Kimberly and her family while I was in Nashville! And to add to the fun, Jen stopped by too!
Seriously this silliness happens every time time we try to take a selfie! This was a pretty perfect end to my trip. My heart is so full!

Hi Danielle,
I made a couple of treats from Celebrations on Halloween to have instead of candy. It felt good to be able to offer my 3 kiddos something a little healthier than Halloween candy!!
I made the spider cookies and they ultimately turned out pretty yummy…very chewy with just the right amount of chocolate. The weird thing was that the oil seemed to start separating from the dough. Did I mix them too long?? And, if my family is not egg free, would these cookies work with eggs in them?? And if so, how would you recommend adding them in?

It was most likely the oil in your sunflower seed butter. Next time, just make sure that the oil and sun-butter are completely incorporated before adding it to the dough. And this recipe was created specifically to be egg-free so I haven’t tried it with eggs. You could definitely add one or two and you would get a better rise in the cookie, but that would throw off the liquid to solid ratios so you would have to increase a dry ingredient as well. 🙂

I’ve been reading and listening to Gretchen Rubin lately about her work on happiness. One of her strategies for becoming happier is to become a minor expert in an area. I’ve been having some health issues lately and cooking this way seems to be a perfect answer for me to merge these two things. I can become better at cooking without grains and thereby become a minor expert and at the same time increase my confidence and happiness! Thanks!

I have a question! You use almond flour a lot- I’ve been using it and it’s delicious- I’m a little concerned about fat content though and consuming too many almonds- when you put portion sizes on there- is that taking into account how many almonds per day you should eat? I feel like I’m eating more than I should and it’s hard to know with the flour. ?
