Happy Friday everyone! Here's our week in review. I'm sharing lots of what we ate, plus a fun new cooking video with Asher. Enjoy your weekend!
Only this guy would make an intense spreadsheet to figure out his best commute times for his new job in Silicon Valley in order to maximize time with us ? We are sure going to miss him after being fortunate enough to have him work with me part-time and from home part-time for the last 2 years, but I am so proud of him!
I'm so proud of my friends from Primal Palate and all of their great spices they keep putting out! This is their new pack of blends. Easton likes the seafood seasoning on his ground chicken that I give him. And their are breakfast blend and adobo are my favorites.
It's not that pretty, but I made the crockpot Sesame Orange Chicken from my first book, Against all Grain, on the stovetop instead. I sautéed the chicken first in a little ghee, then transferred it to a plate, discarded the liquid, and wiped out the pan. Threw all of the sauce ingredients into the skillet and let it simmer until it was thickened, about 15 minutes. I also added orange zest for a little more flavor. Then tossed the chicken back in and simmered everything for 5 minutes. Not quite as good as the slow cooker but great when you're short on time!
I make a few pounds of this honey mustard chicken and keep it in the fridge for salads throughout the week. I'm going to add the chicken recipe to my Cookery App soon!

We love Saturdays, walks, and farmer's markets. Easton is hiding under there somewhere ?
I made some grilled veggies with a basil vinaigrette (all from our garden! ??)
Weekend pancakes are a staple in our home. This is a new recipe from my upcoming Celebrations Cookbook, but there's a great pancake mix in Meals Made Simple if you have that book!
I added some apricots to my Grain-free blueberry galette last night for dinner with friends. ? You can watch me make the recipe here!

Do you think you could make the sesame orange chicken in an instant pot?

Yes definitely! I haven’t tried it personally, but I’ve heard it takes about 10 minutes.

Will you start doing more Instant Pot recipes? I just got one and would love to A) have more recipes to use it for and B) know how to convert your slower cooker recipes into Instant Pot recipes! 🙂

Danielle, do you know how long the hidden veggie muffins will last? And how should I store them? Are they much better fresh or do they store pretty well?

I think everything is best fresh, but I usually keep them in the fridge and they last for about a week. You can also freeze them!
