Danielle’s Digest: Week of 7/3/16 & 7/10/16

This week on the Digest you'll see how we spent our 4th of July, what we've been eating, what we were up to on vacation, my new Bread & Butter Pickle recipe, and my first look at my Celebrations cookbook!

Leftover_

We had some leftover fried cauli-rice so I added a fried egg and some crumbled bacon on top for a breakfast last week.

Here's the recipe for my Bread & Butter Pickles, everyone!
Paleo Bread and Butter Pickles
• 3 Persian or Kirby cucumbers, (about 1/2 pound)
• 1/4 white onion, thinly sliced
• 1 1/2 tablespoons kosher salt
• 1/3 cup light-colored honey (such as clover)
• 1/3 cup apple cider vinegar
• 2 teaspoons whole mustard seeds
• 1 teaspoon whole coriander seeds
• 1/4 teaspoon celery seed
• 1/4 teaspoon ground turmeric
• pinch of red pepper flakes

1. Cut the cucumbers into 1/4-inch thick rounds. Mix together the cucumber, onion, and salt in a medium sized bowl. Cover with ice and let sit for 3 hours, stirring occasionally. Rinse and drain well.
2. Combine the remaining ingredients and cucumber mixture in a saucepan. Heat to a low simmer then remove the saucepan from heat. Do not boil.
3. Pour everything into a sterilized clear jar and press the cucumbers down to submerge them. Let sit at room temperature until cooled. Tightly seal and place in fridge. Chill for 4 to 6 hours then enjoy!

I hope everyone had a happy 4th of July holiday! ?? This fresh squeezed lime juice was used for glorious Watermelon Margaritas. happy

His sweet smile just makes life that much better! I know I say this every time, but I can't believe how big he's getting.

I loved seeing all of your creations over the 4th of July weekend!! Most of these recipes were from my books but a few of you got ambitious and made my new Blueberry Galette without a real recipe even printed yet! Nice job, everyone!

If you go to Vail you have to go up to Adventure Ridge. The view is incredible and Asher and his cousin had so much fun doing the ropes courses, zip lines, and tubing slides. And Ryan and me were jealous we couldn't do the adult versions!

PS bring a coat… It was so windy and cold!

This was a Smoked Trout Salad that I enjoyed for lunch while on our vacation with family. It was delicious and full of flavor!

This is our first big pumpkin! I took a lot of snapchats of our garden after being away for a week. And let me tell you– it exploded!

Easton has mostly moved to finger foods, but I still do some purees to make sure he's getting enough veggies or the things that are still to hard for him to eat. We had a lot of produce that was going to go bad when we left town, so now we're stocked on baby food!

I made a big batch of the tuna salad from Meals Made Simple for quick lunches throughout the week. It's great over a bed of lettuce, or with taro chips.

I cooked from the beautiful new Hemsley Hemsley cookbook the other night and it was so fun! I snuck a bite of their Crockpot Chicken Pot Roast with Sweet Paprika and Cayenne and it was delicious! I also took their tip and threw the bones back into the slow cooker to make broth.
So many of their recipes are Paleo or easily converted, especially with their sub notes. Plus, the photos are dreamy!
