
I wanted to share my brownie recipe with you straight from the book today! I titled it a “cake brownie” so that those who prefer a fudgy brownie wouldn't be disappointed! Don't worry though fudge-brownie lovers, I have a recipe for that in my notebook that didn't make the book and will post that on the blog at some point.
The long wait is over and my book is out! This has been the most surreal last couple of months, and I am so very grateful for the extremely warm reception of both my story and my book. I cannot wait to see photos of all of you making my recipes and start to hear your reviews of the dishes. I put all of my heart into each of the 365 pages and hope you love it!
The book is stocked in every single Barnes&Noble across the country, Amazon, AND I just got the list of Costco stores that is doing a test-run on the book! These stores will have the books on their shelves this week and some as early as today, so call first to make sure! Let's sell out these stores so they keep ordering more and stock them in every Costco!
I wanted to share my gluten free chocolate brownie recipe with you straight from the book today! I titled it a “cake brownie” so that those who prefer a fudgy brownie wouldn't be disappointed! Don't worry though fudge-brownie lovers, I have a recipe for that in my notebook that didn't make the book and will post that on the blog at some point.
This recipe is perfect in my opinion. It's dense like a brownie, but has the moist crumb of a chocolate sheet cake. And there's 3 types of chocolate in these, so get ready for a deep rich dark chocolate flavor. My favorite way to eat these is warm with a big scoop of vanilla coconut milk ice cream and drizzled with warm caramel and fudge sauce (pages 288 & 290). But if there's leftover, I have to restrain myself from eating one for breakfast. Straight from the pan… With a knife that never leaves the pan in case I want to go back for seconds, or thirds.

These look scrumptious – a must-try, seriously! As anyone who’s experimented with grain-free baking undoubtedly has discovered…coconut flour can be a fickle, albeit delicious, ingredient, easy to measure incorrectly. With that in mind, can you please tell us if you sift, then measure, then sift again in this recipe? Also, do you measure your coconut flour by spooning it into the measuring cup, or by dipping the measuring cup into the coconut flour container? I bake by weight whenever possible, and so your guidance here is greatly appreciated.

I just received your cookbook and I can’t wait to start cooking and baking! I have recently started following the SCD after being diagnosed with IBS. Your cookbook and blog have really helped me navigate this new lifestyle. I can’t thank you enough!
I was curious about a few of the recipes labeled “SCD” in your book. I noticed the sweet potato fries and chips were labeled SCD, but I thought sweet potatoes were “illegal”. Is it because you soaked the potatoes first? Also, some of the recipes that have the dairy-free chocolate chips or dark chocolate are also labeled SCD. I can’t seem to find a straight answer if those are “legal” or not. Any insight would be appreciated. Thank you!

Katie! Sweet potatoes are NOT legal on SCD. I am so sorry that these somehow got labeled as such. I am checking through all of them again and will issue out a note to everyone soon and this will be fixed in the next printing of the book. The recipes that involve chocolate should have asteriks next to it saying to remove it for SCD. Did you see otherwise. Thank you for alerting me to this.

Danielle, thanks for the quick response and clarification. For the recipes with chocolate chips (i.e. banana bread & spiced pumpkin muffins), the chocolate chips are listed as “optional add-ins”. I don’t see asterisks specifying omission for SCD. Another quick note, the mint-chip ice cream does not say to omit the chocolate for SCD.
I could only imagine how hard it was to put all these recipes together and keep track of all the dietary restrictions. You have created an amazing cookbook and I am recommending it to all my family and friends!

I recently went low carb and stumbled upon your book at the bookstore. I loved your photos and the recipes looked amazing. A bonus, my boys have dairy allergies and they can eat EVERYTHING in the book. I showed them the dessert section and said they can make all items. They quickly chose the Chocolate Cream Pie with Chocolate Cookie Crust. This morning we made it. We had great fun eating the cookie crust off the beaters, so yummy! I am thinking of just making cookie crust. We are anxiously waiting our 6 hour set time. I do have a question. I used coconut milk from a carton, not the can type. The pudding is kinda thin and I am wondering if it was the wrong milk to use. I am hoping it will firm up in the refrigerator. I will share how yummy it is later.

We just finished trying the Chocolate Pie with Cookie Crust. It was AMAZING!! My boys who have never had anything like it (they have dairy allergies) gave me hugs and loads of “Thank you’s”. So thank you, thank you, thank you! It is great to be able to give them a dessert that looks and tastes better than the other stuff. The added bonus is that I can eat it too and still keep on my diet.

I have the zucchini muffins in right now. I have to say, this is probably my favorite Paleo cookbook. I find a lot of the others look self published and lack certain polish or organizational quality….but not yours! Looks fantastic, easy to search for recipes, and I love the thumbnails pics in the back index. Incredibly well thought out, well laid out, and beautiful to look at. Hi Danielle, Your cookbook looks beautfiul. I don’t know if I will be waiting for our Costco to get it or not. I am excited that they might be though! There are no chain bookstores in our town. I am also very excited that the cookbook is a hardcopy not an ebook!! Hardcopy books seem like they are going by the wayside. I like to sit and look at a cookbook. For me it is far more inspiring for menu planning etc. than scrolling down on a screen! Congratulations on your book launching.

Your book was in my Mail yeasterday (in Norway). I have made waffles last night and sweet potato fries this afternoon. I fond the waffles very satisfying and I could bring it for my lunch at work today without getting dry overnight. For the fries I cut to much of the potatoes so I got two batches. First time I usedvanlig paper, but not the second time because I did not have any left. They actually got more crisp without the paper.
My next mission is the vanilla-almond granola.
Two questions: 1) what kino of honey do you use in your recepies. There are lots of different kinds in my shops and I have for the time 4 different types. 2) I am used to Norwegian recepies and instructions will tell me where to bake in the oven. On the bottom, middle or top. Maybe out ovens are different from yours. Or Maybe it is common sense for you americans 🙂

I got your book and immediately tried out the brownie recipe. What a surprise to see so many baked goods in your recipe book. I thought I’d have to give them up for life when switching to a paleo diet..
So, the brownies turned out fluffy, and taste awesome, but mine were not moist, but rather fairly dry. If you take two bites without a drink, they’ll pretty much absorb all of the moisture in your mouth. I’m wondering if I should adjust the amount of coconut flour down a bit in the next batch. Do you have any suggestions for making sure they come out moist and not dry?
I won’t have any problems whatsoever finishing off the pan, so not bad for my first try, but I definitely want to improve a bit the next time around.

I just need to tell you how much I LOVE your recipes! And you! I am 5 months pregnant and demonstrating signs of hypothyroidism, which runs in my family. I was told that added hormones during times such as pregnancy in a woman’s life can bring on the disease. After being told to start taking Synthroid by my doctor, I instead opted to find a functional medicine doctor who prescribed a gluten free/dairy free (except grass fed butter) diet. After some research, I decided to do completely grain free instead. Your website and cookbook have been so amazing during this whole transition!! I have always eaten healthy, but I still love sweets and carbs. So far I have made your cake brownies (twice), chocolate chip cookies (which are incredibly good, therefore incredibly dangerous just as you say), jello, rosemary breadsticks, zucchini bread, banana bread, and pumpkin bread (which was a guest post), pot roast, layer cake (but I made cupcakes) frosted with fudge sauce, mayonnaise, and for dinner tonight granny sarellas meat sauce with zucchini noodles! I have my first loaf of world famous sandwich bread in the oven right now and plan on making the french toast casserole this week, as well as mint chip ice cream! I’m sure I’ve forgotten a few, but what I wanted you to know is that everyday I look forward to cooking (and my husband looks forward to eating) because of your cookbook! I LOVE to cook and you have provided a way to enjoy cooking (and eating!) grain free and dairy free. Thank you so much! And again, a special thank you for the brownie and choc chip cookie recipe :)!!

I generally am not a kitchen person, but got your book due to wheat allergy and plunged in. The sandwich bread=great. The N’Oatmeal Cookies=great. The Breakfast Hash=great. Now I am baking for Thanksgiving for myself and friends who cannot tolerate wheat, gluten, or dairy. Now I love baking your recipes. Thank for turning adversity into well….art.
Here’s a QUESTION….is Coconut Cream as workable as shortening as Palm Shortening (which I don’t have).

No, coconut cream cream is just pureed coconut and water. Your best sub for palm shortening is unsalted grass-fed butter or ghee.

I baked these brownies last night and frosted them with the chocolate fudge sauce from page 288. They are fantastic! My children love them. My 13 year old daughter who normally turns up her nose at my wheat-free creations actually asked me for a second brownie because they taste so good. I also made your cinnamon raisin coffee cake last week and it was a big hit too.
My son has wheat intolerance’s and I’ve been trying so hard over the years to replace his favourite baked goods with wheat-free options that don’t taste like sand. I have several gluten-free cookbooks but yours is my absolute favourite. Thank you so much for writing it.

Just made these for a play date with our dairy intolerant little friend, he gobbled them right up and so did his mom, pretty sure she’s on her way to Barnes and Noble right now haha! For those experiencing dryness, make sure to sift the coconut flour and level it with the back of a butter knife. I’ve done that with a few failed recipes and that fixed the problem!
