Danielle’s Digest: Week of 10/4/15

This week has been so much fun! We went apple picking because Asher has been asking for so long and it's memories like that that just need to be made! It feels as if every week that goes by, I realize how quickly time passes. In this week's digest, I'm showing you a few of my meals from the week, giving tips on how to prep in advance, and how to feed that insatiable hunger that comes with breastfeeding!

I bought these hoping they'd be fun treats to put in Asher's lunches, but of course my picky kid would say no to deliciously crunchy fruit clusters and chocolate covered dried bananas. He'd rather have seaweed! Guess I'll just have to eat them. I count this as a huge score for mom!

lasagnaWe enjoyed such a yummy dinner this past week! I made the Lasagna from my first book, Against all Grain. I used Kite Hill ricotta instead of the homemade almond cheese. I think it's the best version yet! Making this is usually a bit of a labor of love, but buying nut-cheese cuts out a big step that made this recipe even easier. I also like to assemble 2 at the same time, and throw one in the freezer! See my newest Freezer Cooking post for more details on how to cook, freeze, and reheat! 

Apple_picking_today_at_the_beautiful_Chileno_Valley_Ranch.____We recently went apple picking at the beautiful Chileno Valley Ranch and Asher was so incredibly happy. I used to go apple picking when I was younger so it's one of those special moments seeing your child take delight in something you used to love.. and still do! 

Breakfast.__A_wrap_from_Meals_Made_Simple_with_ghee_and_strawberry_preserves__2_eggs__bacon__and_a_decaf_pumpkin_spice_coffee.__aageats__paleo This is a version of what my breakfasts have looked like recently. A wrap from Meals Made Simple with ghee and strawberry preserves, 2 eggs, bacon, and a decaf pumpkin spice coffee. Yum! I keep a double batch of wraps in the freezer with parchment paper between each one so I can have them ready at any time. I like to reheat it in a skillet with a little ghee until it's warm and crisp on both sides. 

Can_t_believe_this_one_is_already_5_weeks_old__I_don_t_ever_want_the_sleepy__cuddly_newborn_phase_to_end._It_s_so_cliche__but_time_really_does_fly__ I can't believe this one is already 6 weeks old (and counting)! I don't ever want the sleepy, cuddly newborn phase to end. It's so cliche, but time really does fly.

Driving over an hour to see the joy on his face this weekend was totally worth it! He's been asking to go apple picking forever. I love that he loves to learn where food comes from and wants to have his own garden at our house. My boy inspires and encourages me to keep doing what I'm doing every day!

I wasn't feeling great from a cold and everyone was out for dinner, so I took to the freezer to find a dinner that wouldn't take long to thaw/reheat. Thankfully I had a few of these Grain-Free Corn Dogs (or corn puppies… Ratatouille anyone?) left from testing and photographing! There's instructions in the recipe for freezing and reheating!

starving in the mornings

I've been so starving in the morning lately with nursing through the night and then working out in the morning and I can't seem to get enough food! During the rest of the day I'm fine. So I added my wraps from Meals Made Simple in the morning to help fill me up. I already had one with strawberry jam and now this 3-egg breakfast wrap with bacon and a cup of decaf coffee. I'm in need of making some of the freezer breakfast burritos from the book to make breakfast even easier! 

stop growing up!I'm going to need these 2 to stop growing. Yep, no more growing up allowed. I had to stop telling Asher that because he would cry before birthdays and didn't want to get older, but I can still feel it! I looked at pictures of Easton from his first few days today and cannot believe how fast he's grown. I miss his little folded legs from being in my belly and his wrinkly newborn skin. And Asher's huge feet and listening to him read makes me cry. Being a mom turns you into the biggest sap!
