Did you all know that I have a cooking channel over on my Youtube page? I try to post there for you as frequently as possible so you can see the food being made, as I know many of you are visual learners! I recently posted a Sausage and Apple Stuffing recipe which we will be using again at Christmas this year, as well as my Shortbread Cookie recipe.
In the next few weeks I'll be posting videos for my dairy-free Creamed Spinach, Buckeye Cookies, grain-free Pancakes, and my grain-free Cinnamon Rolls! You can watch my most recent two below, but make sure to also head over to my Youtube page and hit that red “subscribe” button so you're notified when the new videos go up. You can also spend some time on there watching dozens of other cooking videos!

The videos are great! So glad to know about them. I had a friend over this weekend and we made your burger bites and
vegetable bacon parcels – fabulous! My friend loves your first book but
hadn’t seen the others, so I got this her Celebrations and Meals Made
Simple as Xmas presents (she’s going to be so happy with them!) I’m looking forward to trying the dressing. Thank you!

You’re so welcome! Thank you Caroline 🙂

I recently bought your celebration book and love it! However I have to cook coconut free because of severe allergy. Can I substitute arrowroot or anything else in place of the flour? Thank you for all your hard work. It makes my life easier and more livable!

There isn’t a perfect 1 to 1 sub for all coconut products. Depending on the specific recipe, you can ususally sub in a mix of cashew milk and cashew cream for coconut milk. The cashew cream is needed because coconut milk is extremely fatty.
You could substitute olive oil, avocado oil, walnut oil, macadamia nut oil, or even grass-fed butter for coconut oil.
Unfortunately, there isn’t a great sub for coconut flour as it is one of a kind. It is extremely absorbent so if you can’t tolerate it, try finding coconut flour free recipes. I hope this helps!

I made your yellow cake and buttercream frosting from celebrations last night, but the frosting came out like marshmallow fluff, and then set into actual marshmallow. Any idea what could have gone wrong? It all still tasted good, just a weird texture. Thanks! ?

That can happen if it is over-beaten or the honey got too hot on the stove. Try adding a few tablespoons of palm shortening if it happens again!
