Candied nuts provide such a great texture and the perfect balance of savory and sweet to any salad. These spiced candied walnuts go especially well in a salad that uses fruit. They also are quite delightful as a snack. Careful when you're picking at them though, you may unintentionally eat them all before you have a chance to add them to a salad!
This recipe calls for walnuts that have been soaked overnight in order to make them easier on the digestive system. When you soak nuts, you break down the enzyme inhibitor that makes nuts hard on your gut. You can chose not to soak them, just be aware that they will take much less time in the oven.

I made these, but I wish I had kept an eye on them, because I just set the timer to 20min at 350 and waited, but after 17 min they were in fire. Whoops. I don’t know what went wrong, but I’m going to try again at a lower temp.

I usually made mine by whisking an egg white, vanilla and water, mixing the nuts in, then adding cinnamon and sugar, bake at 250 for an hour. Could I add in honey instead of sugar? (to make it Paleo) I like mine to be crispy.
