
I'm sitting in my living room, by the light of the tree, sipping on a mug of creamy, rich hot chocolate. Something I have not done since long before I gave up refined sugar, processed foods, and most dairy. I don't know why I never thought to make it before now. It's so simple and while I'm sure there are plenty of other recipes out there, none of them include Hot Cocoa with Peppermint Marshmallow Cookies that melt just like those little artificial marshmallows that came in the powdered hot cocoa packets we used to drink. This drink is comforting on a cold day or at the end of a long day chasing around a 2 year old.
Asher has never tasted chocolate milk, let alone hot chocolate, so on a blustery day last week I decided to make him some as a special treat. He took one sip and was over it! He's not much of a sweets kid, but does love his chocolate so I was surprised! Probably better for all of us because once he likes something, he asks for it over and over (and over and over) again. Maybe I'll try it again when we're up in Tahoe after Christmas and he's been out in the snow all day. For now though, I'll happily finish up the leftovers!

Question about almond milk…..every single carton I have ever checked the store is full of a TON of ingredients. I have never found one that had enough ‘normal’ ingredients that I could buy. What kind do you buy?

So this is probably a dumb question, but I am getting mixed answers when I search on the internet–Is cocoa powder the same thing as cacao powder? If not, what kind of cocoa powder do you use?

good question – as far as I understand Cacao is not processed using heat, so it’s a raw product and it has more antioxidants and nutrients. Also, generally, cacao is organic.

This must be from the pic you posted on FB when you were sipping on it and editing the pics in lightroom! I never liked those fake marshmallows in instant hot cocoa – I always scooped them out! I make homemade marshmallows and they are perfect for cocoa. I can’t wait to try this recipe. I am ordering this brand of coconut milk of amazon too!

I just made your Celebrations Hot Cocoa with a few variations (Cashew milk and coconut milk) and I put it on the SOUP setting on my Vitamix!!! OH MY GOODNESS!!!! It is amazing!!! Thank you!!!
