Coffee Nut Truffles

Snacking on SCD is somewhat difficult, and the nuts and dried fruit tend to get old after a while. However, if you combine the nuts with the dried fruit, and throw in some coffee grounds and raw coconut, you get a delicious and SCD friendly snack that is easy to eat on the go. Because of the high protein content, these little bites will also give you the energy that people with IBD sometimes lack from Anemia or lack of nutrients.These are also vegan and raw!

I use some of my favorite nuts and seeds here, but you really could substitute any nuts in that you'd like. Just make sure to buy raw unsalted nuts, and keep the measurements the same. Some nuts may be drier than others, so if you find the dough too dry to roll into balls, add a few more dates or additional coconut oil. I made this batch with a little unsweetened 100% cacao powder which is not SCD legal, so omit that if you're following SCD.

 

Coffee Nut Truffles

Ingredients:

  • 1/2 cup Raw Almonds
  • 1/2 cup Hazelnuts
  • 1/2 cup Walnuts
  • 1/2 cup Pecans
  • 1/2 cup Pumpkin seeds
  • 6-8 dates
  • 3 tablespoons virgin coconut oil (melted and cooled to room temperature)
  • 1 tablespoon honey (omit if Vegan)
  • 1 tablespoon freshly ground Decaf coffee
  • 1 cup raw unsweetened coconut (shredded)
  • Optional 
    1 tablespoon unsweetened 100% cacao powder

Instructions:

  1. First, grind all the nuts in a food processor, until it looks like a nut flour. Set the flour aside.
  2. Starting with 6 dates, process the dates, honey and the coconut oil until smooth.
  3. Add in the nut flour, 1/4 cup of the coconut, and the coffee grinds (and the cacao if using). Process until well combined. Add the additional 2 dates if dough doesn’t stick together.
  4. Roll dough into bite sized balls, then roll in the remaining coconut.
  5. Refrigerate for about 30 minutes before eating. Store in the fridge in a sealed container for 1 month.
