This week on Danielle's Digest you'll see some of my quick lunches and dinners, some funny mommy moments, and even a few of additions I made to some of my favorite recipes to change things up a bit! I added a Serrano to my Cranberry Sauce from Thankful to make a Cranberry Pepper Jelly. I ate it with a little goat cheese spread on apple and pear slices and also served some rice crackers along with it. P.S. that Guittard Chocolate 85% chocolate bar was amazing!
I love baking with my boys! Asher has been obsessed with gingerbread making. We bought a few kits from Cost Plus, but we made some homemade paleo gingerbread men for eating! The recipe is in Joyful. I think we've made around 6 gingerbread houses by now haha!

So this is what motherhood looks like as of late. These texts came with an hour in between. Thanks to my lovely husband for reminding me that we need to eat dinner and also to not burn the house down! 😉
And this is what was supposed to be in that “on” oven at 5… And went in at 6. This is one of my favorite easy meals from Meals Made Simple but tonight I threw in some artichoke hearts and goat cheese! I served it over some freshly roasted spaghetti squash. And it even looks festive!

Here's one of my quick lunches. It was leftover taco meat (seasoning is from Meals Made Simple) with plantain chips, lettuce, salsa and avocado.
This is what the floor of my car looks like lately. A wet diaper, rain boots, my ergo, and Uggs. No matter how many times a week I empty my car out, it somehow always looks like this haha!
This made me laugh so hard this week, and I'm so happy it brought all of my fans on IG a little giggle too! The struggle is real… 😉
