Easton's all smiles in the office!
I met a friend out for lunch and I'd have to say this was my favorite lunch this week! Warm spinach salad with sautéed cauliflower, brussels sprouts, apples, bacon, cranberries, pomegranate seeds, and lots of seared ahi tuna on top.
Whenever a holiday comes around Asher always asks for that kind of shaped pancake. This time it was a pumpkin shaped pancake with some melted dairy-free chocolate on top to make the jack-o-lantern face! You can find my Pancake recipe in Meals Made Simple on page 68.
Last weekend we had another pumpkin patch visit (and I wouldn't be surprised if Asher asks to go again this coming weekend)! After 3 pumpkin patches in 2 weeks, and with our stowaway pumpkin from Nashville, our collection is officially out of control… you could call us pumpkin hoarders!
We got a picture of what life would be like with triplets and a newborn this past weekend while watching my nephew and one of Asher's buddies! I was the only female amongst 5 boys haha! You moms of 3+ are my heroes!
You know all the extra liquid and bones that are leftover from a crockpot meal? I turned it into soup! It's already collagen/gelatin rich from the bones cooking in it all day and the liquid is like a rich stock. I do it with pot roast all the time and it makes an awesome beef soup.
This was a recipe mash up from Meals Made Simple. I saved the liquid and bones from the slow cooker Chicken Verde and I used leftover Pork Tenderloin to make a version of the White Pork Chili. It looks kind of gross in the pot, but it tasted amazing afterwards! I enjoyed mine with some fresh avocado on top.
Asher loves to wish everyone good morning at the start of his day and watching him say hello to Easton in the mornings is one of the most precious things because they are both so cuddly at that time!
I didn't have time to scoop and press individual cookies so I baked my Real Deal Chocolate Chip Cookies as cookie bars! I doubled the batch and baked them for about 17 minutes and they turned out perfect. Crisp on the outside and gooey and melty on the inside. That's my kind of cookie, folks! It's even more incredible served with a scoop of dairy-free vanilla ice cream!
I had extremely important plans at 6:00 pm. Asher always has so many fun ideas. This night it was a costume contest between our family. He delivered this note and then ran away. haha
And after the costume contest, we baked and frosted some Sugar Cookies! I love how Easton just can't take his eyes off of his daddy! 🙂
This is a pretty good picture of what recipe testing looks like. 15 pounds of honey gone in the blink of an eye!
Here's a throwback to last year's costumes. I definitely don't have time to come up with something to beat it this year since I'll likely throw on a pair of cat ears and a leopard print sweater and call it a costume! I thoroughly enjoyed a bowl of my Mexican Chicken Chowder from Against all Grain. It is the perfect color for this Autumn season!
Now this is what I call a good mail day! I'm obsessed with these chambray minimoc and all of the cute stickers for documenting E's milestones from Lucy Darling Shop! Yay!
My second favorite lunch was a BLTA Ranch Burger Salad and is reprising its roll as my favorite way to enjoy leftover burgers! I used the Dairy-Free Ranch from Meals Made Simple and threw on some dill pickle kraut for good measure!

Hi Oriane- I have an 8 week meal plan in my second book, Meals Made Simple (wearing white shirt on the cover) that you may find helpful! Eating this way is supposed to get your body to a healthy weight. When I started this diet I actually gained a lot of weight. Which was really good and needed because I was extremely malnourished. For others though, they find that eating this way has caused them to lose weight. Everyone’s different though!

Hi. My sons are 15 and 13. I was a pediatric nurse for 10 years before I had children. I knew I wanted to vaccinate my children but I wanted to do what was best for them. I went a a conference with a doctor from the CDC. I asked her how the schedule for vaccinations was decided. She said it was due to when most parents would bring their children to see a doctor. Well that made up my mind quickly. I had a very open, frank discussion with my pediatrician and we came up with our own schedule. I still haven’t given them some recommend vaccines with the approval of their doctor about what is best for them. I hope this encourages you to have an open discussion with you pediatrician.

Hi Danielle. I use Great Lakes Gellatin on your recommendation, but I could have sworn that sometime last year you also recommended a new type/brand of gelatin? I cant find it on your blog however. Anyone care to refresh my memory? Thanks!
