Danielle’s Digest: Week of 8/16/15

This week on the Digest you'll see lots of family time! It's the last week of summer for us, and we've been trying to sneak in some last special summer activities! It also happened to be Asher's birthday, and we'll be celebrating another birthday sometime this week with the arrival of our newest little member. We're just playing the waiting game and we can not wait to meet this little one!

I am so in love with these two! In less than a week I will be holding them both in my arms and we'll all be together. I think Asher will be bummed that he can't sit his shelf anymore. 🙂

Asher is so much better at this than I am. He put together over 1600 lego pieces this week! He is clearly his fathers son! 🙂

This was a maple glazed wild salmon with blue lake green beans and spinach instead of polenta I had when we were out for dinner! Don't be afraid to ask to sub a grain side dish for extra vegetables at restaurants. They're usually very accommodating! Definitely my favorite meal I ate this week.

I can not believe I now have a 5 year old and I can't believe how old he looks in this picture! He's my favorite little buddy, and he brings so much joy and life to our house every single day. Ryan and I are beyond grateful and proud of you little man!

This was a simple scramble I had for breakfast. I added raw grass-fed cheddar, ham. It was so delicious!

This is our first year packing lunches for Asher so I'm flipping back through some of our old kid favorites from Against all Grain for ideas! Almost all of these are nut-free!

He's not a sandwich type of kid (even on my grain-free bread), so I plan on doing lots of bite sized protein options like mini meatballs, meatloaf muffins, and my grain/nut-free chicken nuggets.

so proud of my hubby

I have to take a break from my regular food content to brag on my husband Ryan for a minute!

A little over a year ago, he took a risk and left his job to chase his dream and see this idea through with a friend. I am BEYOND proud of him for doing something that has brought him so much joy and fulfillment. He and his team (now 4!) have been working so hard on this for the last year and we're so excited to see it out in the world!

grief comes out of left field

Here's real moment for a minute from last week. Grief comes out of left field on an otherwise normal day and can hit you like a ton of unexpected bricks from the tiniest trigger. 
And organic frozen yogurt being eaten in a car wash so no one sees the tears may seem like it will help, but it really doesn't. Neither do pesky pregnancy hormones! It sure did taste good though.

Enchilada

I know you all love to see my easy weeknight meals, so here's one for you this week! It doesn't look like much but it was good! I put my gluten-free enchilada sauce over spaghetti squash with leftover grilled chicken and avocado. Simple and delicious!
