Danielle’s Digest: Week of 7/5/15

Welcome to my weekly download!

I’m asked so frequently about what it looks like to live a grain-free life day to day, what new products I find or recommend, and what I eat on a daily basis. So I share a blog post every Friday recapping my week for you guys! I’ll try to catalog my meals, snacks, grocery and market shopping finds, and even some of my fashion finds on occasion! day 1 of kid free

Ryan's parents offered to take Asher for a week of grandparent time. He's been gone already for 5 days and we miss him like crazy! This was day 1 of being kid-less. Ryan and I both naturally woke up early so we were out to breakfast by 8, seeing a silly matinee movie by 10:40am and at lunch for Thai food by 1pm. We were asleep by 9pm. This is my favorite thing to order when we go out for breakfast – eggs benedict, no english muffin and I substitute spinach underneath! Also with Thai food, most curries are safe and if they use soy sauce in their stir-fry dishes, just ask them to omit it. I gave the rice to Ryan.

Overall, I'd say it was a productive and fun date day but we were already ready for Asher to come home on day 1!

This is the beauty of wine country, a.k.a. “Wine World” as Asher likes to call it! I absolutely love that we can drive 45 minutes to Napa and feel like we're in a different world. It's one of my favorite getaway spots, and the Carneros Inn is pure heaven on earth!

I need something to eat almost immediately after getting up so I got a massive bowl of fruit while we looked at the menu. Ryan helped me, but I stole all of the pineapple and grapes!

The color may not be super appetizing but this “Green Eggs and Ham” was delicious! The sauce was a lemon-leek hollandaise and was so rich and delicious over the ham and poached eggs underneath.
This warm arugula salad with a poached egg and pancetta vinaigrette was decadent!

I wish this could be my backyard. I'd be lounging out here every single day if I could!

I was getting jealous of all of Ryan's fun and cooling cocktails, so I asked them to make me a drink with cranberry juice, muddled cucumbers, and soda water. It helped!

I ate this salad 2 days in a row. I had to omit the chickpeas and sub out the dressing for a vinaigrette, but it was so refreshing! This resort has a big garden and most of the vegetables they serve are straight from the property!

This was my dinner at Boonfly Cafe in Napa.This trout was incredible and I love that this restaurant uses fresh vegetables grown on the property in their dishes. I subbed out the rice pilaf for extra farmer's market vegetables!

These are the Chile Verde Chicken Enchiladas from my blog! They're just as good dairy-free if you can't tolerate cheese. I had a batch in the freezer waiting for a night where I ran out of time to cook, so I pulled these out in the morning to let them thaw and then baked them! I LOVE freezer meals.

My dog has been known to swallow whole, clean socks (12 at once to be exact), full loaves of my Blender Bread, countless treats left on the counter, and diapers. But this is a first! I guess she missed me? Good thing Costco is carrying it again! 

oodles of zoodles

I've been working on getting this simple summer recipe up on the blog for you all and I should have it posted next week! I found a great almond based ricotta at Whole Foods and I've loved experimenting with it! So far it's good on zoodles, pizza, and pretty much everything else! Grab a spiral slicer in the meantime if you don't have one!

steak

Ryan's parents have had Asher for entire week! The house has been so quiet! Naturally, I channeled my boredom and cooked. I made marinated Tri Tip with Grilled Artichokes (recipe is in my Against all Grain cookbook) and a salad with goat cheese, tomatoes, avocado, carrots and pistachios. Lately, I've been obsessed with pistachios on salad… if you haven't tried it, you should!

I bought this all in the name of recipe testing. I made the testers eat the gluten-full cake but I just had to see the color and texture for comparison! The beans, well, you'll just have to wait and see when the book comes out. Get excited for book 3, people!

cravings

This is a real time #daniellescravings for you! I went in for an apple and came out with cultured sour cream because all of a sudden I wanted to dip taro chips in it, grass-fed cheddar because I really wanted mustard, and a few forks full of kraut because it just sounded good. I just stood over the counter and ate it all, with the fridge door still open….
