My Green Smoothie

Green Smoothie by Against All Grain

 

Everyone has their own go-to green smoothie these days, but in case you are lacking in creativity or just need a change from your usual- here is my green smoothie. Mine is not the beautiful green hue that you see in so many because Asher refuses to drink it if it’s green, so I add plenty of blueberries and strawberries to cover up the “healthy” color. I don’t necessarily use this shake as a meal replacement but there’s days when my stomach can’t handle anything in the morning and I opt for a lighter drink and then have an early lunch. I use coconut milk in my smoothie to add fat which helps in absorbing the nutrients that the greens provide.

Chris Kresser touched on it briefly in a podcast last year and it has stuck with me ever since. I can’t wait to hear him speak at Paleof(x) this year. He’s a wealth of knowledge and easy to listen to so I can track with him, rather than wondering off into thoughts of what food I want to try to recreate next. I typically don’t spend a lot of time researching the scientific part of the Paleo world because the anecdotal evidence from my personal experience is enough for me (and I just love food too much!) , but it has been a resolution this year to become more informed, so this conference is my first step in that direction.

I prefer to use part unfiltered apple juice for sweetness mixed with part coconut milk to dilute the sugars from the juice. You can  juice your own apples for fresh apple cider or a bottle of unfiltered juice. Feel free to also substitute the juice with coconut water or almond milk if you are watching your sugar intake.

My Green Smoothie

SERVES: 3-4

PREP TIME: 5 mins

TOTAL TIME: 5 mins

Ingredients:

  • 1½ cup unfiltered apple juice*
  • ¾ cup coconut milk
  • ¾ cup frozen blueberries
  • ½ large banana
  • 5 large frozen strawberries
  • 1 heaping cup mixed leafy greens (spinach, kale, chard, etc.)
  • 1 cup ice

*may use water in place of juice for reduced sugar

Instructions:

Place all ingredients into a blender in the order listed. Blend on low for 15 seconds, then on high for 30 seconds, until smooth.
