Have you ever had the pleasure of tasting a gyro? It’s a pita sandwich stuffed with tender meat that melts in your mouth after being slow roasted on a spit then shaved thin. Many cultures serve similar sandwiches, but the gyro I’m familiar with hails from Greece. It is topped with a cool cucumber yogurt sauce called tzatziki, tomatoes, and sliced red onions. I remember having my first one while my family was traveling in Europe about 10 years ago and have loved them ever since.
You can find gyros using any variety of meat: chicken, beef, lamb, or pork. My favorite is the slow roasted lamb. To simplify things and reduce cooking time, I used US Wellness Meat’s ground grass-fed lamb and marinated it in spices and lemon juice. A quick 8 minutes on the grill and you have yourself a burger that has all of the flavors of the traditional Gyro.
