Watermelon Mint Lemonade

We had a few of our dearest friends and their little ones over for a Memorial Day barbeque last weekend and had such a lovely time. The weather was perfect, and the food was delicious! All of the kids played in the backyard, the men hung out around the grill, and the ladies prepared the side dishes in the kitchen. Such a stereotypical American barbeque and so much fun!

Everyone brought dishes to share, but I greeted everyone with this fresh watermelon mint lemonade. Some chose to spike theirs with a little tequila, but I love mine as it is. It's so refreshing on a warm day and is the perfect summer beverage!

Stir the honey water and chopped mint into the watermelon, cucumber, and lemon juice then put in the fridge to chill for an hour.

Serve over ice with a lemon slice as a garnish. Enjoy!

Watermelon Mint Lemonade

AUTHOR:

SERVES: 6

Ingredients:

  • 1.5 cups hot water
  • ¼ cup honey
  • 4 cups watermelon chunks, rind removed
  • 3 lemons
  • 1 cucumber, peeled
  • ½ cup cup fresh mint, roughly chopped

Instructions:

  1. Mix the honey into the hot water until it dissolves, then set aside until it cools to room temperature.
  2. Run the watermelon, lemons, and cucumber through a juicer. Pour the extracted juice into a pitcher.
  3. Alternatively, you can put the watermelon and cucumber in a high speed blender and blend until smooth but you will want to make sure there are no seeds. Juice the lemons by hand, then stir into the pureed watermelon mixture. Pour through a fine mesh sieve into a pitcher.
